Going for a casual pizza ending with a sanglier!

Two weeks ago after a walk in le Garrigues we went for a pizza in St Saturnin, it was Sunday lunchtime. A  few hunters walked in, it was their place to have a beer and bite after the Sunday morning hunt. Our pizza  was really delicious, Inge settled the bill and I started to talk with some hunters. Any luck guys,  mais qui, walk with me....he showed me at the back of his very old Range Rover 3 massive sanglier (wild boar/everzwijnen) and a cute hunting dog. One of the guys asked, do you want some....I said yes but uhhh I'm not a butcher ....ah monsieur of course not, we will cut a nice piece and Diego (a Villarcois apparently) will deliver. 

Two weeks nothing happened we start to believe it was one of those.....Tonight at 17:00 the bell rings (two weeks later) Diego and son with a 5 kg shoulder of the sanglier, nicely prepared for the freezer. It so big we had a real struggle to get this thing in the freezer. 


This was another lovely experience in Provence, at times we get all upset if a plumber doesn't show up, or a gardener is 3 hrs late but we melt for these kind of unbelievable graciousness. Merci l' equippe de chasse de St Saturnin....and Jorrit, Paul get over here to make your fabulous ragout and everyone at Les Dubois you are all invited her for a great meal!
